Bowl for making the spice rub mixture and storing side ribs
Plastic wrap
Aluminum foil
Baking rack
Baking tray
Preparation
Add all the ingredients into a bowl and mix well.
Side Ribs: Cut the ribs into individual pieces. Place them in the bowl and mix them with your hands until all the pieces are covered with the mixture.
Cover the bowl and place in fridge overnight.
Back Ribs: Liberally pour the mixture all over one side of the rack of ribs and pat it in gently with a spoon.
Flip the rack of ribs over and repeat, covering all sides with the mixture.
Cover them and store them overnight. If you have a big enough container to can keep the ribs in, instead of cling film, use that.
Cooking Instructions
When you’re ready to cook, heat the oven to 300F.
Place the ribs on top of the baking rack in the baking tray. Place the ribs in the oven.
For side ribs: After 1 hour 15 minutes, take the ribs out and wrap them tightly with 3 layers of aluminum foil. You can do this in one or two groups of rib pieces; don’t wrap each piece individually!
Put the ribs back in the oven for 2 hours.
When you take them out, let them stand for 10 minutes to finish cooking.
